Best Cadbury Egg Cookies Recipe

For festive Cadbury egg cookies, add a bag of small eggs to your favourite chewy chocolate chip cookie foundation!  


– 1 ½ cups unsalted butter room temperature – 1 cup granulated sugar – 1 cup packed light brown sugar – 1 tablespoon pure vanilla extract – 2 large egg – 3 ¾ cups all-purpose flour spooned and leveled – 2 teaspoons baking soda – 1 ¼ teaspoons sea salt – 2 cups semisweet chocolate chip – 1 bag Cadbury Mini Eggs 9 ounces, chopped – flaky sea salt for topping optional


Beat butter and sugars for 4 minutes in a stand mixer with the paddle attachment or a large bowl with an electric hand mixer.   

Step 1

Continue beating on medium speed for 3–4 minutes after adding vanilla and eggs.   

Step 2

Mix flour, baking soda, and salt in a large bowl. Mix the dry ingredients into the butter mixture slowly on low speed until barely mixed.   

Step 3

Mix in chocolate chips and Cadbury Mini Eggs until mixed. Cover and chill dough overnight or for 2 hours.  

Step 4

To bake the cookies, remove the dough from the fridge, preheat the oven to 350°F and line baking pans with parchment paper.   

Step 5

Place 2 tablespoon dough balls at least 2 inches apart on prepared baking sheets. To make the cookies as shown, press chocolate and Cadbury Mini Egg pieces on top of each dough ball before baking.   

Step 6

Bake 13-15 minutes till golden brown (soft centres). Sprinkle flaky sea salt on cookie tops if desired.   

Step 7

After 2-3 minutes on the cookie sheet, transfer the cookies to a cooling rack to finish cooling.
