Best Cowboy Cookies Recipe

Cowboy cookies are substantial oatmeal chocolate chip cookies. Oats, chocolate chips, coconut, and nuts make these chewy cookies unique.  


– 3 cups all-purpose flour – 1 tablespoon baking powder – 1 tablespoon baking soda – 1 tablespoon ground cinnamon – 1 teaspoon fine sea salt – 1½ cups unsalted butter at room temperature – 1½ cups granulated sugar – 1½ cups packed light-brown sugar – 3 eggs at room temperature – 1 tablespoon pure vanilla extract – 3 cups semisweet chocolate chip – 3 cups old-fashioned rolled oat – 2 cups flaked coconut sweetened or unsweetened is fine – 2 cups chopped pecans 8 ounce – flaky sea salt optional


Mix flour, baking powder, soda, cinnamon, and salt in a large bowl. Set aside.  

Step 1

Beat butter with an electric mixer at medium speed in a stand mixer with the paddle attachment or a large basin until smooth and creamy.   

Step 2

Mix in the sugars slowly until well mixed and frothy. Beat each egg after adding it. Mix in vanilla extract.  

Step 3

Add flour mixture slowly and stir until just blended. Mix in chocolate chips, oats, coconut, and pecans until dough is cohesive.  

Step 4

Store dough in the fridge for 12–24 hours. Pre-heat the oven to 350°F and line baking sheets with parchment paper before baking the cookies.   

Step 5

Let the dough come to room temperature while the oven heats up. For each cookie, put dough onto prepared baking sheets, 3 inches apart, using a big cookie scoop (¼ cup volume).   

Step 6

Use your palm or a glass bottom to slightly flatten each dough ball. Bake 16–18 minutes until edges are gently browned. If desired, sprinkle flaky sea salt immediately.   

Step 7

Allow cookies to cool on pans for 5 minutes before transferring to wire racks to finish cooling.
