Best Cranberry Banana Bread Recipe

This cranberry banana bread is a wintery take on an old favourite. It has both sweet and tart cranberries.  


– 2 cups fresh or frozen cranberrie – 2 cups granulated sugar divided use – 2 cups flour – 1 teaspoon baking powder – ¾ teaspoon baking soda – 1 teaspoon fine sea salt – 3 egg – 2 teaspoons pure vanilla extract – 4 bananas mashed (about 2 cups) – 14 tablespoons unsalted butter melted and cooled – Coarse sugar for topping


Warm the oven up to 350°F. Line a 10x5-inch loaf pan with parchment paper and grease it. Put away.  

Step 1

Cut the cherries into large pieces. Add 1 cup of sugar and mix them together. Set them away.  

Step 2

Gather the rest of the granulated sugar, flour, baking powder, baking soda, and salt in a big bowl. Use a whisk to mix them all together.  

Step 3

Make a different bowl and mix the mashed bananas, eggs, and vanilla extract with a whisk. Mix the wet ingredients into the dry ones until they are just barely mixed.  

Step 4

Add the cranberries that have been sugared and the melted butter. Stir just until the butter is mixed in.  

Step 5

Once the cake pan is ready, pour the batter into it. Add coarse sugar to the top. If you stick a toothpick into the middle and it comes out clean, the cake is done.   

Step 6

Cool in the pan for 15 minutes, then move to a wire rack to cool all the way through.
