Best Strawberry Oatmeal Bars Recipe

Strawberry muesli bars are a delightful way to celebrate berry season with a simple oat-packed shell and fresh strawberry filling.  

INGREDIENTS

For the Filling: – 4 cups whole strawberries washed, hulled and diced – ⅔ cup granulated sugar – Juice from half of a lemon about 1 ½ tablespoon – ⅓ cup corn starch For the Crust/topping: – 2 cups old fashioned rolled oat – 2 cups all-purpose flour – ⅔ cup granulated sugar – 1 ½ teaspoons cinnamon – 14 tablespoons unsalted butter room temperature – ½ teaspoon salt – 1 teaspoon pure vanilla extract

INSTRUCTIONS

Warm the oven up to 350°F. Spray nonstick spray on a 9x13-inch baking pan and set it away.  

Step 1

Prepare the filling:- Mix the sugar and diced strawberries together in a big bowl. Let it sit for a while. Add the cornflour and lemon juice after 10 minutes and stir them together.  

Step 2

Prepare the crust/topping:- Mix oats, flour, sugar, cinnamon, butter, salt, and vanilla in a stand mixer on low speed until the butter is equally distributed and the texture resembles coarse meal.  

Step 3

Firmly press 2/3 of the crust ingredients onto the pan bottom with your hands or a measuring cup or glass.  

Step 4

Strawberry filling should cover the crust evenly. Sprinkle the leftover crust mixture over the strawberry filling, clumping some to make a crumb-like topping.  

Step 5

Bake bars till golden brown, 35-40 minutes. Cool fully before cutting.
