Greek Chickpea Soup Recipe

Light and comfortable one-pot lemony Greek chickpea soup with zucchini, carrots, garbanzo beans, and fresh herbs. Protein-rich, gluten-free, vegan, and healthy. Ideal 30-minute dinner!  

– 1 tbsp olive oil – 1 small yellow onion, diced – 2 – 3 large carrots, peeled and chopped – 2 large celery ribs, chopped – 1 medium zucchini, cut into half-moon – 3 cloves garlic, minced – 1 tsp dried thyme – ¾ tsp dried oregano – ½ tsp crushed red pepper, optional for spice – 1 tsp salt, more to taste – ½ tsp black pepper – 2 cans (15-ounces) of chickpeas, drained and rinsed – 6 cups low-sodium vegetable broth, or chicken broth – 3 – 4 cups baby spinach – ¼ cups fresh parsley, chopped – 1 large lemon, juiced – Optional garnishes: fresh parsley, feta cheese, or parmesan cheese


In a big pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Cook the chopped onion for three to five minutes, or until it becomes transparent.

Add diced zucchini, celery, and carrots and sauté for 2–3 minutes.If using, add crushed red pepper, dried oregano, thyme, black pepper, and salt.

Add garlic and sauté until fragrant, 1 minute.Add chickpeas and vegetarian broth. After boiling, reduce the heat to medium-low and simmer the soup for 20–30 minutes.

One to two cups of the soup (broth plus chickpeas) should be carefully transferred to a blender. Pulse a few times. Add the onions and carrots; exclude the celery and zucchini.

This process aids in the soup's natural thickening. Reintroduce 1 cup of the mashed chickpeas to the soup using a fork if you don't have a blender.

An immersion blender can also be pulsed five to ten times.Stir the mixed mixture after adding it back to the saucepan. Don't puree everything; you still want whole chickpeas in the soup.

Add the lemon juice, chopped spinach, and fresh parsley. Cook until the spinach wilts, about one to two more minutes.

Top with a sprinkling of fresh parsley and serve warm. You may also want to top with some feta cheese.
