Tasty Air Fryer Zucchini Chips Recipe

These air-fried zucchini chips are a tasty appetiser or side dish topped with parmesan breadcrumbs.  

INGREDIENTS

– 3-4 small zucchini cut into ¼-inch round – ½ cup all-purpose flour – 2 tablespoons cornstarch – 2 large egg – 1 cup unseasoned breadcrumb – 1 tablespoon italian seasoning – 1 teaspoon fine sea salt – 1 teaspoon black pepper – 1 teaspoon garlic powder – ¼ cup freshly grated parmesan cheese

INSTRUCTIONS

Get three small, wide bowls or pie plates. Mix the flour and cornflour together in the first one.   

Step 1

In the second, beat the eggs just a little. With a whisk, mix the parmesan cheese, salt, pepper, Italian seasoning, and breadcrumbs in the third bowl.  

Step 2

For 5 to 10 minutes, heat the air fryer up to 400°F. Mix the flour and salt together. Dredge the zucchini rounds in it. Then, dip them in the eggs.   

Step 3

Finally, cover them with the breadcrumb mixture. Place the rounds on a baking sheet lined with parchment paper until you are ready to air fry them.  

Step 4

When you're ready to air fry, put some of the floured rounds in the air fryer basket in a single layer. Spray a little olive oil or cooking spray on top.   

Step 5

After 5 minutes in the air fryer at 400°F, flip the rounds over and spray the other sides with cooking spray or olive oil.  

Step 6

Cook at 400°F for another 5 minutes, or until both sides are crispy and golden brown.  

Step 7

Depending on the size of your air fryer, do this again with the rest of the breaded zucchini circles. Heat it up and serve it with a sauce like ranch or tomato to dip it in.
