Tasty Chicken Margherita (Grilled Or Stovetop!) Recipe

A light, tasty dinner, Easy Chicken Margherita, with juicy grilled chicken, melty mozzarella cheese, pesto, and fresh tomatoes.  

INGREDIENTS

– 1 Tablespoon olive oil, plus additional vegetable oil if grilling – 1 teaspoon Kosher salt – 1/2 teaspoon black pepper – 3/4 teaspoon garlic powder – 4 boneless skinless chicken breasts (1-1.5 lbs) – 1/2 cup basil pesto – 6 ounces fresh mozzarella cheese, sliced – Balsamic reduction or glaze

INSTRUCTIONS

For the grill:- Fire up the grill at 400. To grease grill grates, dip a paper towel in vegetable oil and use tongs.  

Step 1

Between two pieces of saran wrap, pound the chicken to an equal thickness using a meat mallet or rolling pin. I like 3/4-inch chicken breasts.  

Step 2

Rub a tablespoon of olive oil on the chicken and season with salt, pepper, and garlic powder.  

Step 3

Flip the chicken after 5 minutes on the grill. After two minutes, open the grill and top each chicken breast with a tablespoon of pesto, mozzarella pieces, and another scoop.   

Step 4

Cover the grill and grill for 2-3 minutes until cheese melts and chicken reaches 165 degrees. Serve with arugula and balsamic glaze.  

Step 5

For the stove top:- Between two pieces of saran wrap, pound the chicken to an equal thickness using a meat mallet or rolling pin. I like 3/4-inch chicken breasts.  

Step  6

Season both sides of chicken with salt, pepper, and garlic powder. Heat 1 tablespoon olive oil on medium. Brown the chicken in the pan for 4 minutes.  

Step  7

After 2 minutes, add a scoop of pesto, mozzarella pieces, and another scoop of pesto to the chicken.   

Step  8

Cover the pan and simmer for 2 more minutes until cheese melts and chicken reaches 165 degrees. Serve with arugula and balsamic reduction.
